From my window, the rooftops of Puerto Vallarta stretched toward the horizon, where the mountains cradled the skyline in a stunning display. The view wasn’t flashy, but it exuded a quiet charm, inviting me to pause and take in the beauty of the moment.

The first night began with a toast to adventure. A one-liter margarita at Cervecería Chapultepec—popularly known as La Chapu—offered the perfect blend of tangy, sweet, and fiery—a flavor as bold as the venue itself. Neon signage illuminated the lively crowd, while the clinking of glasses created a rhythm that felt uniquely Puerto Vallarta. The margarita’s chili rim added a playful kick, mirroring the vibrant personality of the bar.

One standout mural featured intricate patterns and vivid colors, capturing the artistic vibrancy of the area.

Some of the best tacos I had in Puerto Vallarta weren’t from a fancy restaurant—they were from a small, unassuming spot: El Punto Restaurante y Tacos. No frills, just fresh tortillas, perfectly cooked meat, and all the right toppings. It was the kind of place where locals eat, and that’s always a good sign. Simple, flavorful, and made with care—this is what great food is all about.

The sopa de tortilla was just right—rich, flavorful tomato-based broth, nicely textured tortilla strips, avocado, queso Oaxaca, chile pasilla, and a side of chicharrón with crema. Simple, satisfying, and a taste of the local rhythm.

Nearby, the mangroves offered a tranquil retreat, their stillness interrupted only by the occasional bird call.
